FajitaMac was born at the intersection of two great American food traditions: the sizzle of Tex‑Mex fajitas and the creamy comfort of Southern mac 'n' cheese. Founded by local chef Maria Hernandez and her partner Luke Thompson, FajitaMac started as a pop-up at Altamont farmers' markets, winning over neighbors with smoky, citrus‑bright fajitas and a signature mac 'n' cheese finished with a spicy chorizo crumble. When a Main Street corner became available in downtown Altamont, they turned their market stall into a cozy restaurant where folks come for quick weekday lunches, family dinners, and weekend catering. We source produce from nearby farms, use house‑made tortillas, and keep our menu focused and approachable — think fajita bowls, loaded macs, and family packs ideal for church or school gatherings.
